Introducing “Shinshu Salmon”

"Shinshu" is the former name of Nagano Prefecture and today, is often used to designate popular traditional food from the region including our famous "Shinshu Soba". This name also refers to other local products including “soba” and many other tasty treats.

Although Matsumoto has no access to the sea, one of the local specialties of the region is salmon. There are many farms around the city breeding “Shinshu Salmon”. Considered one of the best fish varieties in Japan, its meat is rich, exquisite and ideal for sushi.

 

Make Your Own Sushi Guided By A Sushi Master

Though it may seem simple, sushi-making is typical of the Japanese culinary arts in that it takes years to master. In that regard, being instructed by a recognized sushi master is a great way to begin or continue that journey as you experience the rich world of this most Japanese of skills.

After a quick demonstration, including cutting the fish and preparing the rice, start creating your own sushi! This experience will allow you to discover the atmosphere and professionalism of real Japanese cuisine while meeting true sushi enthusiasts!

After the effort, comes the reward! Learn all about the local yet very famous “Shinshu Salmon” along with other varieties of fish before sitting down to enjoy the sushi you created!

In total, 8 different types of sushi will be offered and accompanied by fresh wasabi from local farms. This gastronomic experience offers real immersion in Japanese culture and is a great opportunity to meet the locals!

Meeting Location: Your tour will begin at Matsumoto Station. Your guide will pick you up at 9:00am or 3:00pm.

Please note that the restaurant has strict sanitary measures during the sushi-making experience. Wearing of masks, gloves and other clothing suitable for restaurant is mandatory and regulated by law.

The restaurant is about a 20-minute walk from the meeting point at Matsumoto Station.

Please note that in accordance with Japanese laws, people less than 20 years old are not allowed to drink alcohol.
